| Ask a Splendid Table: Switching pan size is no piece of cake
Q How do you substitute cake pans? The pear gingerbread recipe I want to do calls for a 9-inch-square pan. I've got an 8-inch-square and two 9-inch-round layer-cake pans. Can I switch to one of these? A Switching pan sizes in baking is tricky because baking times and temperatures are based on the kind of cake, how much batter is in the pan and how dense it is. Toying with time and temperatures in nearly every kind of cake is asking for trouble. That said, there are exceptions. For instance, when you are doing recipes like brownies -- where how the cake rises isn't the issue, but, rather, how moist or not moist it becomes in baking -- you can get away with switching pans. This guide should help and following it is my take on a pear gingerbread that will work in your 8-inch-square pan.
Eat for Life: Pancakes come stacked with nutrition
Compared with a bowl of oatmeal, pancakes seem like a lightweight breakfast option. But Whole-Wheat Pancakes With Dried Fruit Conserve add several layers of nutrition to start the day. Combine whole-wheat flour with rolled oats for the health benefits of whole grains. Add chopped walnuts, which contain heart-healthy omega-3, and chopped apple bits for added vitamins and fiber. Then make a batter using low-fat buttermilk, fat-free milk and unsweetened applesauce to cut down on saturated fat. .
Obama's Hispanderama
The Plano Con is back. Once again a leftish movie is claiming "red-state" embrace simply because it's doing good business at a metroplex in what one kf reader calls a "ritzy, upscale, SUV-choked, conspicuous-consumption-driven Dallas exurb populated by more east-coast 'expatriates' than native Texans." Last year it was Brokeback Mountain's producers, via Frank Rich [$], successfully using the bogus Plano example. This year it's the promoters of Al Gore's An Inconvenient Truth. S.F. Chronicle's gullible Joe Garofoli reports (in an article headlined "Gore movie is reaching the red states too") that Truth is getting "off-the-chart audience recommendations in conservative bastions like Plano." The film's pleasing of Plano allegedly shows it's is reaching what its director Davis Guggenheim calls "that guy driving a pickup who is a little bit skeptical of what global warming is about." Don't believe it.
Justin Timberlake Smacks Into A Car; Missy, Busta Have 'A Ball': Super ...
More than 93 million people watched last year's Super Bowl, and with this year's contest only a few days away, will it be the game itself or the ads that get viewers talking the most? "People who aren't even sports fans watch the Super Bowl, just to watch the commercials," Derek Jeter, shortstop for the New York Yankees, said in a press video hyping the ads. With that in mind, 26 brands have gone all out this year to provide star-packed ads involving celebs like Jeter, Justin Timberlake, Madonna, Shakira, Missy Elliott, Busta Rhymes and LL Cool J. The stars are making appearances via their images and/or music, most of them for Pepsi. "PepsiCo is the second-biggest advertiser in the Super Bowl this year," after Anheuser-Busch, USA Today advertising reporter Theresa Howard said.
